Strawberry Delight

Layer 1:

  • 2 ½ cups chopped pretzels 2 TBSP brown sugar
  • ¾ cup margarine or butter (1 ½ sticks melted)

Put in oblong dish about 8 X 13 in and mix. Press down; bake 10 min at 350 degrees. Let cool completely.

Layer 2:

  • 8 oz package cream cheese
  • 1 cup sugar
  • 9 oz cool whip

Combine all and spread on pretzel crust.

Layer 3:

  • 2 (3 oz) boxed strawberry jello
  • 1 ½ cup boiling water
  • 2 cup strawberries

Mix jello and boiling water; add strawberries to jello. When it gets thick, pour over cheese mixture. Let set until jellied.

Strawberry Jam

  • 5 cups prepared strawberries
  • 7 cups sugar
  • 1 TSP butter or lemon juice to reduce foam

Boil one minute. Take one package of pectin and put in strawberry mixture and boil for one minute. Remove any foam and put in hot jars. (I take a hand mixer and chop up strawberries finer after I mix ingredients).

Strawberry Skillet Cake

Cake:

  • ¾ cup unsalted butter
  • 1 1/3 cup sugar
  • ¼ cup strawberry gelatin
  • 4 medium eggs
  • 2 Tsp Vanilla
  • 2 ¼ cups cake flour
  • 2 Tsp Baking Powder
  • ½ tsp salt
  • ¾ cup buttermilk
  • ½ cup chopped strawberries

Frosting:

  • ¾ cup whole strawberries
  • 8 oz cream cheese
  • ½ cup unsalted butter
  • 4 cups powdered sugar
  • Preheat oven to 325 degrees. Pretreat cast skillet.

Cake: Beat butter, sugar and gelatin 3-4 minutes. Add eggs and vanilla. In a separate bowl mix flour, baking powder and salt. Slowly add flour mixture and buttermilk to other mix alternating. Mix until fully combined then fold in strawberries. Spread in skillet and cook until done. About 50 minutes.

Frosting: Process strawberries until pureed. In a bowl beat cream cheese, butter then add in powdered sugar. Add 5 TBSP of strawberry puree and mix will be thin. Refrigerate for 30 minutes +/-. Spread frosting on cooled cake and garnish with sliced strawberries.

Strawberries on a Cloud

  • 2 pints of strawberries
  • 2 blocks of cream cheese
  • 1 sugar free angel food cake box mix
  • 1 Large cool whip
  • 3-4 TBSP Milk
  • Large box of Equal

Bake cake according to box instructions. Cut the berries and put 8 packs of equal over them. Soften cream cheese with 10 packs of equal and 3-4 TBSP milk, mix together until smooth, mix in cool whip. Break the cake up into bite size pieces and mix together. Put strawberries on top.
